Makes: ½ cup (approximately 4 servings)

Ingredients

  • ¼ cup extra virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 teaspoon Dijon mustard

  • 1 teaspoon honey

  • 1 garlic clove, finely minced

  • Kosher salt and freshly ground black pepper, to taste


Directions

Step 1

Add all of the ingredients to a small mason jar with a tight-fitting lid.

Step 2

Seal the jar and shake vigorously for about 30 seconds, until the dressing is fully emulsified.

Step 3

Taste and adjust the seasoning with additional lemon juice, honey, salt, or pepper if desired.

Step 4

Drizzle over your favourite salads or refrigerate until ready to use.


Storage

Store in a sealed mason jar in the refrigerator for up to 10 days.

Shake well before each use, as the natural ingredients will separate over time.
